I got really upset. I honestly wanted him to say I was pretty, and still have no idea if he finds me attractive. I know he does care a lot for me and I care for him, but I’ve been upset ever since he said it.

Well at least it’s early enough in the relationship that you can move on to another man who meets your needs. Saying you’re looks are “normal” isn’t normal and LDR’s are tough enough as it is. Everyone wants to be appreciated for being attractive on some level and this might be a deal breaker. At least you caught this red flag early on.
I would communicate that you need to know if you are attractive to him or not and see how you feel from that answer. If you feel uncomfortable after that about his answer, then you have your real answer there.
